Raspberry Linzer Cookies for Valentine’s Day
Raspberries are known to be high in fiber and they help with gut bacteria plus they contain antioxidants and flavonoids! These Raspberry Linzer Valentine’s Day Cookies are made with the raspberry super food that some studies suggest may also help prevent high blood pressure and heart disease. Raspberries have flavonoids and thus scientists have found evidence that they have plenty of mood-enhancing properties as well!
Raspberry Filling
Sugar Cookies
- ¾ cup plus 2 tablespoons unsalted butter, room temperature
- 1 cup white sugar
- 2 teaspoons Nielsen-Massey Pure Vanilla Extract
- ½ teaspoon salt
- 1 large egg, room temperature
- 3 cups all-purpose flour
- 2 tablespoons confectioners’ sugar, for dusting
- 3 Wilton Cookie Sheets
- Wilton unbleached parchment paper
- Joseph Joseph rolling pin.
- Wilton heart cookie cutter
Directions
Sugar Cookies
In a medium bowl combine butter, sugar, Nielsen-Massey vanilla extract and salt and beat with a hand mixer until creamy and fully mixed. Now add the room temperature egg and beat until the batter is smooth.
Next add the flour and beat your mix until a crumbly dough forms. Use your hands to fold the dough together and shape it into about a 2-inch thick flattened out ball. Wrap the flat ball in plastic wrap and chill in the refrigerator for 2-3 hours.
Preheat your oven to 375°F and prepare three Wilton baking sheets with Wilton brand unbleached parchment paper.
Remove the dough from the fridge and allow it to sit on the counter for 10-15 minutes to warm only a bit (not to room temp). Next, roll the dough to a ⅛ – ¼ inch thickness using a Joseph Joseph rolling pin. Use a heart-shaped Wilton cookie cutter to stamp out 30 cookies, then use a smaller heart shaped cookie cutter to cut the centers out of half of the cookies.
Transfer the heart shaped cookies onto the baking sheets and freeze them for 20 minutes. After freezing they have been in the freezer place them directly into the oven and bake them for 10 minutes (oven temps and times vary), or until the edges begin to turn slightly golden. Allow the cookies to cool completely before adding the filling.
Once completely cooled, spread 2-3 teaspoons of filling onto the cookies that are whole hearts. Then place the cut-out cookies on top of each whole cookie and then dust with confectioners’ (powdered) sugar. We suggest that you allow the cookies to set for 2 or more hours before enjoying. Your cookies can be stored at room temperature for 1-2 days in an airtight plastic container.
