Peters Westchester Milk Chocolate is an incredibly smooth, creamy, rich milk chocolate. Both professional and everyday candy makers rave about the ultra-creaminess of peters chocolate and how easy it is to melt.
Melting Instructions
Microwave: Place the melting wafers in a microwave-safe bowl or a disposable piping bag. Heat in the microwave at 50% power for 30 seconds. Stir or knead the bag, then repeat in 30-second intervals until the wafers are fully melted and smooth.
Stovetop: Fill the bottom of a double boiler halfway with water and bring to a simmer. Place the top portion securely and add the melting wafers, stirring continuously until they are fully melted and smooth.
Cooling: Allow your creation to cool in an area with a temperature between 45°F and 65°F, low humidity, and good airflow. You can also cool it in the refrigerator, though cooling times will vary depending on the project. Avoid placing coatings in the freezer.
Westchester milk-chocolate flavored candy coating comes from Peters. Confectionary candy coating contains cocoa powder and vegetable oil. It is easy to melt and requires no tempering. If a thinner coating is desired, paramount crystals may be added. If adding flavors or colors, use a concentrated flavor or oil-based color.
