Caramel Tips 101

We've been using Peter’s Caramel for years and have learned some great tips to help you get the most out of your caramel experience. Check out our best caramel tips and tricks below!

Melting Caramel:

  • The ideal melting temperature for caramel is between 150-170°F, which gives it the perfect consistency for pouring or dipping. If it overheats, it can harden and crack when cooled.

Melting Methods:

  • Oven (Our Preferred Method): Preheat the oven to the lowest setting (200°F) and place caramel in an oven. It will take 90-120 minutes to melt fully. 
  • Stove Top: Heat the caramel slowly, keeping the temperature within 150-170°F to avoid overcooking.
  • Microwave: Use a microwave-safe dish, heat the caramel on high for 1 minute, stir, and continue melting at 50% power in 30-second intervals. Stir frequently to prevent scorching.
  • Crock Pot: The “warm” setting (about 165°F) works well, but you’ll need to stir constantly to prevent burning.

Other Uses for Peter's Caramel:

  • The caramel loaf is soft and pliable, ideal for melting, rolling, cutting, and shaping.
  • To Thicken: Add ½-1 oz of confectioners’ sugar per pound of melted caramel to reach the desired thickness.
  • To Thin: Add a splash of heavy cream, or mix in one can of sweetened condensed milk and a cube of butter to a 5 lb. loaf for a thinner consistency.
  • Chocolate Caramel: Mix 1-2 oz of melted chocolate liquor into 1 lb. of caramel for a rich, chocolatey flavor.
  • Coloring Caramel: Add a few drops of gel food coloring to the melted caramel. Darker colors work best due to the caramel's natural hue.
  • Flavoring Caramel: Enhance your caramel with a few drops of your favorite emulsions or flavoring - we use Lorann's brand flavors. Try fun flavors like black licorice, pumpkin, or raspberry for a delicious twist!

Storage and Shelf Life:

  • Store caramel in an airtight container in a cool, dry place—avoid refrigeration or freezing. We recommend using a plastic bag, so the caramel peels off easily when you're ready to use it.
  • When stored properly, Peter’s Caramel has a shelf life of over a year.

Caramel Coverage:

  • One loaf of Peter’s Caramel will cover about 25 medium-sized apples or 40-60 pretzel rods (half-dipped).
