Viral Dubai Chocolate Bar Recipe

Ingredients:

  • Polycarbonate mold: Use a deep mold for plenty of filling. Any mold will work if you don't have a deep one.
  • Colored white chocolate or cocoa butter: We used Callebaut white chocolate chunks or Mercken white with Colour Mill lime oil-based food coloring.
  • Callebaut or Merckens milk chocolate chunks or any couverture chocolate: The amount depends on your mold size.
  • Filo dough or Kataifi dough: 1 1/4 cups, shredded and chopped, for three bars. 
  • Butter: 6 tablespoons.
  • Pistachio praline or pistachio cream: About 10 oz, enough to soak the filo dough or Kataifi dough.

Instructions:

  1. Prepare the Mold:

    • Use a deep polycarbonate or silicone mold to hold a generous amount of filling.
    • Paint the mold with colored white chocolate or cocoa butter. We used Callebaut white chocolate chunks, or you can use Mercken white colored with Colour Mill lime oil-based food color.
  2. Temper the Chocolate:

    • Melt and temper your chocolate based on the instructions for the type you're using.
    • Pour the tempered chocolate into the mold to create the shell, ensuring the sides are well coated.
    • Place the mold in the refrigerator until the chocolate hardens.
  3. Prepare the Filling:

    • Melt 6 tablespoons of butter in a pan.
    • Add the shredded/chopped filo dough to the melted butter.
    • Stir and cook the dough until golden brown, then transfer it to a bowl.
    • Mix in pistachio praline or paste, using enough to drench the dough (about 10 oz).
    • Cool the filling in the fridge to avoid melting the chocolate shell when assembling.
  4. Assemble the Chocolate Bars:

    • Once the filling is cooled, evenly distribute it into each chocolate mold.
    • Pour additional tempered chocolate over the filling to seal the bars.
    • Place the mold back in the fridge until the chocolate sets, about 30 minutes.
  5. Unmold and Enjoy:

    • Once the bars are fully solid, gently pop them out of the mold.
